Epic



Epic....a new word in my vocabulary. Not that I didn't know it before...but people definitely use it frequently out here. I like it.

What a great weekend! Friday I had training for work all day...long, long but I did learn a lot about my organization/company and I am even more excited and proud to be working for SAY. They do a lot of amazing things for the community, have great programs, and have a huge impact on San Diego County! After a long day I headed to dinner for my friend Maria's birthday. We had a nice group of about 8 girls...we headed to the Mission Valley neighborhood to a new and upscale Mexican restaurant called Maria, Maria. It is affiliated with Carlos Santana http://mariamariarestaurants.com/low/. It was AMAZING! Great margaritas, amazing atmosphere, and delicious food. I ordered a Chile Relleno and it came out in an enormous skillet!!! Insane. We actually befriended the manager and got the major hook up with food and a free birthday dessert for Maria. It was great to meet some new girls and enjoy a night out. We then headed back to PB and went out to a bar in our neck of the woods. An all around great night and I think Maria definitely enjoyed turning 26 :)

Saturday was started off with the UGA game of course! I invited Jake over to watch and we enjoyed the amazing Sausage Crescent Roll Casserole Lacy made at my birthday last year. (Recipe below). Sooooo good but def. not good for you! ha--We then headed to Temecula, CA (wine country) with Jake's (and my new) friends Alex (girl) and her boyfriend Jason. Temecula http://www.cityoftemecula.org/temecula/visitors/ is about an hour North and inland from where I live. We enjoyed eating lunch at Callaway Winery http://www.callawaywinery.com/main.html and of course drank some great wine. I will def. be going back to this place and taking my family there in a few weeks. After a leisurely lunch we headed to the film festival...Jake and Jason's friend had a film being shown. We even got VIP passes and saw some cool films...such a nice day. We headed back to San Diego for a nice relaxing night at their apartment chatting and hanging out in their complex's hot tub. They are such a sweet couple and I really enjoyed hanging out with them. Alex was with us on Friday night for Maria's birthday and I def. feel like I have made a new friend who I will be hanging out with again...always exciting!!

Tomorrow is my CPR/First Aid Training for work that I am required to do. It is from 9-5 so I am so not excited about it :( Poor Roxie has been so neglected this weekend...she will need some major TLC this upcoming week.

Recipe for Yummy and Easy Breakfast Dish

1 package of Jimmy Dean Sausage
1 package of cream cheese
2 containers of Crescent Rolls

Cook sausage according to package in a skillet. Do not slice but break up like you would ground beef. Once fully cooked, drain if necessary. Add cream cheese until it is melted and blended well with sausage. Grease or spray a 9 X 11 pyrex baking dish. Roll out one can of the crescent rolls creating a "crust" Spread the sausage mixture. Roll out the second can of crescent rolls, forming a "top". Bake according to crescent roll directions. Serve and ENJOY...and try not to think about unhealthy it is :)
